A good Caesar Salad is sublime, I don’t know why or what it is and I kind of think of it as a I do a margarita, rarely does one taste the same, simple ingredients but so many different outcomes. Here’s a simple Caesar Salad recipe that more or less covers the basics, make it and then of course season to taste.
One Crushed Clove Garlic
About a half oz of Anchovies or Anchovy paste
One Egg Yolk
Half Teaspoon of Worcestershire Sauce
Two Tablespoons Lemon Juice
3/4 cup vegetable oil or very light olive oil
1/2 cup grated / shredded parmesan cheese
This is really easy, whisk together garlic, anchovies, egg, Worcestershire and lemon juice together, slowly add the oil, til you get a consistency like mayo, then slowly fold in the parmesan. From there get you romaine lettuce, croutons and anything else you want to toss in and you’re done. Little crushed pepper and salt to taste.
