Yes, maybe smoked salmon is over-represented at weddings and other occasions, but it’s for a reason, quick and easy, hot or cold, always delicious (although you have to have good quality salmon). While I covered the idea before here I’m really stuck on the latkes – little friend potato cakes of delicious. Latkes are very easy to make, the trick is that the starch in the potatoes are what keeps them together. So here we go.
2 1/2 cups peeled / grated / shredded potatoes
1 1/2 oz Butter
1/3 to 1/2 cup flour
Vegetable oil (for frying)
Two good sized leeks
Couple sprigs thyme
heat up the butter with the leeks and thyme, cook until slightly carmelized. Separately mix together potatoes, eggs and flour, season with salt and pepper. Pat dry the mixture with paper towels to get rid of any excess moisture. in frying pan coat with the oil and a little extra maybe just a quarter of an inch deep. Each Latke will be one big teaspoon of mix in the pan. Fry on each side for about 4 or 5 minutes or until nice and golden crispy. Remove and set on plate with paper towel down.
Heap on Leeks and salmon, with maybe a little creme fraiche…
